Veggie Tacos

Today for Recipe Tuesday 
I have an extremely easy vegan dinner... 

This is my version of Veggie Tacos

Ingredients: 
2 ears of corn
1 T. olive oil 
1 yellow onion, cut into thin slices  
1 zucchini, diced 
1 yellow squash, diced  
1 can black beans, rinsed and drained 
1 tomato, diced  
1 avocado, sliced  
tortillas 
salt and pepper 

Step 1: Cook the corn. I cover the corn with cold water 
in a large pot and add 1 T. sugar. Bring the pot to a boil. 
Once boiling, remove, cover, and allow to sit 
for 10 minutes before removing corn. 

Step 2: Heat the oil in a large pan. Add onion and cook 
for a few minutes until lightly browned. Add squash and 
cook about five minutes more, until soft. 

Step 3: Add beans and corn to the pan and cook until heated throughout. 
Season with salt and pepper. 

Step 4: Assemble tacos. 
I added tomato and avocado to mine. 
Such a mix of flavors. Yum!
