champagne cupcakes: good news and bad news

Last time I made champagne cupcakes they were gluten free and amazing. I'm not bragging, I just had a really good recipe (which you can find here, I highly recommend it whether you eat gluten or not).

Today I made some pink champagne cupcakes that used regular flour with this recipe. I can't believe how hard it was to find one that didn't use vegetable shortening or a box of cake mix (which also contains vegetable shortening AND feels like cheating). I was pretty excited that they turned out this gorgeous...


BUT (huge but), when I ate one later, it was disappointingly dense. The batter was weird, really thick, which should have clued me in. You're supposed to fold in beaten egg whites, but it's hard to fold something with the consistency of cookie dough...not sure what happened there.

The frosting, however, is delicious. In the future I'll use turbinado sugar on top rather than these sprinkles. The cupcakes looked like animal cookies, which doesn't exactly scream "hey, I've got booze inside!".
